Yes, you can do this project. When you apply the paper to the countertop, make sure it is properly sealed, otherwise, the paper will take up moisture stains from the resin. A couple of layers of a clear drying glue will do the trick.
To cover the countertop, you will want to use a doming resin. They have enough surface tension such that it will want to stay on the surface of your counter and not drip off. (You should still be prepared for drips though.) The doming resin I would recommend for this is Alumilite Amazing Clear cast.
