I wanted to know what material I can make a large mold from to encase a small log in epoxy resin. Could I use cut plastic sheets formed into a box and coated with something?

Yes, you can use acrylic sheet coated with a mold release to serve as the mold box. I would suggest either the Ultra 4 Parfilm mold release or the Petrolease mold release. Both can be found here:
